This artisan-made Fiocci Di Culatello ham is made from the samllest and most muscular section of the back of the swine thigh; the same cut of pork meat used for regular Culatello ham. After being trimmed, the meat is dry-salted and seasoned with spices and left to slowly mature in a humid yet fresh environment for at least six months. Sweet yet salty with nutty hints.
